After struggling with 2 or 3 different mice that were slow and inaccurate on the grantie counter top my wife uses, I bought her a Microsoft Explorer Blue Track mouse. It is the most accurate mouse I have ever used! While listing to the Windows Weekly podcast, I heard Paul Thurrott recommend these after testing them on different surfaces. My wife's computer is an iMac and the mouse worked right out of the box.
