TextGuru has the best select/copy/cut/paste mechanism so far, even if it is limited to within the app. Evernote us the best for sync’g & managing notes, as well as adding multimedia notes. I also use iBluesky for mindmapping & outlining but am awaiting it to have two-way synching before it will be useful.

Palringo is also my choice for basic IM, but I add Fring for Skype support & Walkie-Talkie for VoIP.

TwitterlatorPro for a complete Twitted experience from advanced search to reply chains & grouping. Facebook, LinkedIN (though lousy), Brightkite & Loopt for other social networking activities.

Grafly because it shows the beauty of math.

iSSH & MochaVNC to connect & control.

But my number 1 app is eReader, which allowed me to move my ebook collection onto the iPhone.
