we went THROUGH a link IN the game, to the iTunes store to download songs, but after getting it, we can’t make it appear in the game.

Is it possible at all to get tap tracks out of iTunes, and if so, how?

(I.e. Easy, extreme) and you have too many songs. Try deleting them by sliding your finger over the right side of the song where it shows your personal record for a song.
